I'm a big fan of pierogi, which I grew up eating. You see, I have some Polish ancestry mixed in with the Italian. They can be a big ponderous and heavy in their traditional form, but these looks beautifully light and airy!

I had no idea I would touch a chord of your heart when I started making my experiment, Frank. I didn't know about the Polish component of your ancestry. I have seen from recipes I have read how rich pierogi can be, but you know me, I go for lightness of being that does not sacrifice flavor. I am planning to write a follow-up post because I also liked the pan-fried version, which I tried with the very last batch.
