This sounjds so amazing for those less than sun-kissed tomatoes available this time of the year. Roasting brings out all the flavours!!!

Thee cherry tomatoes in your picture rival even the ones I find in Calabria: we never have that variety. They look so pretty. I'll try this recipe for sure: while I get some reasonable mozzarella at the Italian market, there is no way to find decent tomatoes, even in August, so they definitely need all the help they can get.

Ciao Val. Once you start roasting cherry tomatoes, it is difficult to stop.

Ciao Caffettiera. Cherry tomatoes are very popular here and they come in many varieties with lovely names. I will write more about them once they appear at the market. They are sold either as a mix, as in the top photo, or as single variety, as in the top photo of the Italian version.

Ciao Ivy. I must say that the variety of cherry tomatoes we have here is great. Once the season starts at our local market, I will write more about the individual varieties, which have also interesting names.

I love insalata caprese, but I think I like the idea of roasting the tomatoes even more! This is just begging for a nice crust of bread.

Definitely, Alicia. The roasting time is not that long and it goes by quickly as you get other dishes ready.
