I crave color these days, even though the weather has been mostly bright and sunny. A batch of my roasted red pepper and almond dip, made last summer and frozen, brightened me for a few days. I was about to thaw another one, when, in the freezer, I found a container of roasted Round of Hungary peppers, also from last summer.

I thawed them and used them to make half a batch of the roasted red pepper and almond dip substituting almonds (mandorle) with cashews (anacardi). I like the result: I detect the flavor of cashews in the background of the peppers.

Although I like them a lot, I have never used cashews in my kitchen. That's about to change, thanks to a collection of recipes focused on cashews that I received recently. In the meantime, having cashews in the kitchen gave me the idea of trying them in a known recipe.

The photo above is from last year, but I have a few plants like that in my vegetable garden now: I love the bicolored leaves. I also harvested some potatoes a few days ago, which screamed to be boiled and turned into a salad. Some were Purple Majesty and some of a pale-fleshed variety I don't remember (you can see it in the photo in this post). I selected the smallest ones and added to them, for variety's sake, a couple of red-skinned, white-fleshed potatoes from Warren Creek Farms (the same farm where I get the beautiful beans you've seen featured in several recent posts).

Based on how well the red pepper dip had worked as pasta sauce for my chestnut flour gnocchetti, I decided to use the cashew version as potato salad dressing. With a couple of small adjustments, it worked quite nicely. I am giving here the ingredients I used for a salad for two, but it is easy to increase them to match the number of people you wish to serve.

Ingredients:

• 10.5 oz. / 300 g new potatoes
• Fine sea salt, to taste
• 2 tablespoons roasted red pepper and almond dip made using cashews instead of almonds (see note below)
• 1 teaspoon olive oil of good quality
  
• Sherry vinegar, to taste

Note: cashews are sold already skinned, so no blanching + skinning is required. Toast them in the oven until golden. Carefully monitor them while they are in the oven to avoid burning. 

Scrub the potatoes and boil them in a pot of water until tender. Drain, cool and cube to obtain bite-size pieces. Season lightly with salt. Add the dip, olive oil and a touch of vinegar and toss lightly but thoroughly.

Let the salad rest before serving. If you refrigerate it, take it out ahead of time so it is not eaten cold.

This is a light and lovely salad, perfect served for dinner after a bowl of winter squash soup (recipe to be published soon, I hope).

a simple side dish that tastes great

I have made this side dish a dozen times recently. As I explained in a recent post, I have been harvesting Brussels sprouts as part of my U-pick CSA share, and those, together with Zutano avocados acquired at our local farmers' market, inspired me to devise this simple, flavorful contorno (side dish). 

The dish highlights the flavor of Brussels sprouts — sweetened by oven-roasting — via the creamy texture of avocado. The lemon juice adds a brightening trill.

Ingredients:

• 1 lb. Brussels sprouts
• Olive oil
• A medium avocado 
  
• Sea salt
• Freshly squeezed lemon juice (succo di limone), possibly from a Meyer lemon

How to roast the Brussels sprouts
Preheat oven to 350 F. Rinse and trim the sprouts as needed: cut off the hard end of the stem (1/16 - 1/8 inch / 2-3 mm), then remove any wilted leaves. Cut the smaller sprouts in half and quarter the larger ones. Place in a bowl and sprinkle a bit of olive oil on them. Stir well then spread in a single layer on a baking sheet lined with a silicone baking mat. Turn the halved sprouts cut side down and the quartered ones to have one of the cut sides down. Bake until tender. After 20 minutes, stir the sprouts (keeping them still in one layer) and gauge the time remaining to complete cooking. They should be nice and tender, with a hint of browning of the lighter parts.

How to finish the dish
While the Brussels sprouts are in the oven, dice the avocado pulp and place in a food processor fitted with the steel blade or a blender, add a pinch of salt and a bit of lemon juice (I prefer the more delicate flavor of Meyer lemon here) and process briefly. Empty into a serving bowl. Alternatively, dice the avocado pulp and place in a serving bowl, add the other two ingredients, and mash it with a fork (this is what I did the evening I took the photo above).

When the Brussels sprouts are ready, place them into the bowl (insalatiera) with the mashed avocado and toss well. Adjust the salt and serve warm.

In our household, these quantities serve two and there are no leftovers (avanzi).

un contorno semplice e gustoso

Questo contorno l'ho preparato una dozzina di volte nelle ultime settimane. Come ho spiegato in un post recente, raccolgo cavolini di Bruxelles in un'azienda agricola locale e questi, insieme agli avocado di varietà Zutano che trovo al farmers' market, mi hanno ispirato a creare un contorno semplice e dal sapore piacevole. 

Attraverso la cremosità dell'avocado, il piatto mette in risalto il sapore dei cavolini di Bruxelles addolciti dalla cottura al forno. Il succo di limone aggiunge una nota brillante.

Ingredienti:

• 450 g cavolini di Bruxelles
• olio d'oliva
• un avocado medio
• sale fino
• succo di limone fresco, possibilmente di limone Meyer

Cuocere i cavolini di Bruxelles
Scaldare il forno a 180 C. Lavare e mondare i cavolini: tagliare la parte dura del gambo (2-3 mm) e rimuovere le foglioline avvizzite, se ce ne sono. Tagliare a metà i cavolini più piccoli e in quarti quelli più grossi. Metterli tutti in un'insalatiera e spruzzarci sopra un po' d'olio. Mescolare bene, poi distribuirli in un solo strato sopra una placca da forno foderata con un tappetino di silicone per forno. Girare le metà in modo che la parte tagliata sia sotto e i quarti in modo che poggino su una delle parti tagliate. Cuocere in forno fino a quando siano teneri. Dopo 20 minuti, mescolare i cavolini mantenendoli su un solo strato e stimare il tempo che rimane per completare la cottura. Al termine devono essere teneri e un po' abbronzati nelle parti chiare.

Completare la preparazione
Mentre i cavolini sono nel forno, tagliare a dadini la polpa dell'avocado e frullarla brevemente insieme ad un pizzico di sale e del succo di limone (io preferisco il sapore delicato del limone Meyer). Versare in un'insalatiera. In alternativa, tagliare a dadini la polpa dell'avocado e metterla in un'insalatiera. Aggiungere gli altri due ingredienti e schiacciarla cin una forchetta (ho fatto così la sera che ho scattato la foto in alto).

Quando i cavolini sono pronti, metterli nell'insalatiera con l'avocado e mescolare bene. Regolare il sale e servire caldi.

A casa nostra questo piatto serve due persone e non ci sono mai avanzi.

What a couple!

Have you ever noticed how pretty a Brussels sprout is? Each one is a miniature cabbage. I have been handling many recently and I still marvel at their perfection.

Brussels sprouts are easy and fun to pick. The photo above shows a field and the one below a stalk bearing some sprouts. I took the photos during one of my Brussels sprout picking expeditions to Redwood Roots Farm. The expeditions are part of my winter U-pick CSA share with the farm. The idea is that, instead of receving a box with my share, I go out to the farm and pick what I want among what's available.

The recipe I am about to describe was inspired by a Dutch dish. The immediate reason for my foray into Dutch cuisine is the first installment of the European Community Culinary ABC, which started this week in the Netherlands (Paesi Bassi).

I have a special connection to that country and to Amsterdam in particular: it is there that my husband and I first met. Although I have been to the Netherlands a few times, my knowledge of Dutch cuisine is nil. So, to prepare my contribution to the event, I browsed the web and quickly found an intriguing recipe that uses two ingredients I like, Brussels sprouts and chestnuts: Spruitjes met kastanjes.

Chestnut season is over, but I still have some local chestnuts I bought at our farmers' market and gladly used them in this dish. (I previously featured chestnuts in a soup: zuppa di castagne, fagioli e patate.) I halved the quantities and made several other adjustments to the original recipe. In particular, I cooked the Brussels sprouts is in the oven, because that is how I prefer to prepare them, used olive oil instead of butter and added some the water in which the raisins had been soaked to round off the dish.

Ingredients:

• 250 g /  9 oz. chestnuts
• 500 g / 1 lb. 2 oz. Brussels sprouts
• A small bay leaf
• Olive oil
• 40 g / 1/3 cup / 1 1/2 oz. raisins (uvetta)
• Ground nutmeg (noce moscata)
• Sea salt

How to cook the chestnuts
Place chestnuts in a saucepan, cover abundantly with water and add the bay leaf. Bring to a boil and cook gently until they are tender. Keep the chestnuts in the cooking water and take out one at a time to peel. Use a sharp knife with a pointed blade to remove the shell, then the skin. Set aside. (If a chestnut breaks, while being handled, it is fine.)

Note: the original recipe describes how to single out "bad" chestnuts to be discarded and also instructs to cut a cross into the ‘flat’ end of the "good" chestnuts. I didn't follow either instructions. Nor did I rinsed the cooked chestnuts in cold water, but followed my tried-and-true method of keeping them in the hot cooking water and take out one at a time to peel.

When the Brussels sprouts are ready, place them in a bowl, add the chestnuts and the raisins, drained, plus a couple of tablespoons of their water. Sprinkle a dash of nutmeg and salt to taste, then dress with half a tablespoon of olive oil. Toss well and serve warm.

I don't know what would happen in a different household, but in ours, this dish served two with not a sprout leaf or chestnut crumb left over.

Che bella coppia!

Avete mai notato quanto sono carini i cavolini di Bruxelles? Ognuno è un cavolo in miniatura. Di recente ne ho presi in mano parecchi e continuo a meravigliarmi della loro perfezione.

 

I cavolini di Bruxelle dono divertenti da raccogliere. La foto qui sopra mostra delle piante e quella qui sotto dei cavolini ancora sulla pianta. Le ho scattate durante una delle mie spedizioni a Redwood Roots Farm: invece di ricevere la cassettina, vado nell'azienda e raccolgo quello che preferisco.

L'ispirazione per la ricetta che sto per descrivere mi è stata data da un piatto olandese adocchiato per il mio contributo alla prima tappa dell'Abbecedario Culinario della Comunità Europea, cominciato questa settimana con una visita ai Paesi Bassi.

Ho un legame speciale con quel paese e in particolare con Amsterdam, dove io e mio marito ci siamo conosciuti. Anche se sono stata nei Paesi Bassi alcune volte, la mia conoscenza della cucina olandese è nulla. Quindi, per preparare il mio contributo all'evento, ho consultato internet e ho subito trovato una ricetta interessante che utilizza cavolini di Bruxelles e castagne, due ingredienti che mi piacciono molto: Spruitjes met kastanjes.

La stagione delle castagne è terminata, ma io ne ho ancora un po', comprate al farmers' market, e le ho utilizzate volentieri in questo piatto. (In precedenza, le avevo usate nell'ottima zuppa di castagne, fagioli e patate.) Ho dimezzato le dosi della ricetta originale e apportato altre modifiche. In particolare, ho cotto i cavolini di Bruxelles al forno, che è il mio modo preferito di prepararli. Inoltre, ho usato olio d'oliva invece di burro e un po' dell'acqua nella quale ho fatto rinvenire l'uvetta per completare il piatto.

Ingredienti:

• 250 g castagne
• 500 g cavolini di Bruxelles
• una piccola foglia d'alloro
• olio d'oliva
• 40 g uvetta
• noce moscata grattugiata
• sale fino

Cuocere le castagne
Mettere le castagne in una pentola, coprire abbondantemente d'acqua e aggiungere l'alloro. Portare a bollore e cuocere a fuoco dolce fino a quando le castagne sono morbide. Tenere le castagne nell'acqua di cottura e tirarne fuori una alla volta per pelarla. Usare un coltello con la punta per rimuovere la buccia e la pellicina. Mettere da parte.

Nota: la ricetta originale descrive un metodo per distinguere le castagne cattive da scartare e fa tagliare una X sulla estremità piatta delle castagne buone. Io non ho seguito tali indicazioni. E non ho sciacquato le castagne cotte in acqua fredda, ma ho seguito il mio metodo solito di tenerle nell'acqua bollente di cottura e tirarne fuori una alla volta per pelarle.

Cuocere i cavolini di Bruxelles

Dopo 20 minuti, mescolare i cavolini mantenendoli su un solo strato e stimate il tempo che rimane per completare la cottura. Al termine devono essere teneri e un po' abbronzati nelle parti chiare.

Completare la preparazione
Mentre i cavolini sono nel forno, far rinvenire l'uvetta in una ciotolina con dell'acqua calda. Quando i cavolini sono pronti, metterli in un'insalatiera, aggiungere le castagne e l'uvetta scolata più 2 cucchiai dell'acqua in cui è stata a mollo. Spargere un pizzico di noce moscata e sale q.b., poi distribuire un filo d'olio (mezzo cucchiaio). Mescolare bene e servire caldo come contorno.

Non so quante persone questo piatto serve in un'altra famiglia, ma nella nostra questo piatto ha servito due persone e non sono avanzate né una foglia di cavoletto né una briciola di castagna.

The Abbecedario culinario d'Italia (Italian Culinary ABC) invites us to visit Sicilia (Sicily), and this time I have some photos to share from a visit to Palermo (capital of the region) five years ago. One characteristic of the city that fascinated me was the juxtaposition of sumptuous architecture and urban disrepair. Here are a couple of examples.

PALERMO CATHEDRAL

The Cattedrale dazzles the eyes with its rich decorations.

SAN CATALDO

The 12th-century Norman church of San Cataldo catches the eyes with its set of pretty red domes.

FONTANA PRETORIA

Piazza Pretoria is dominated by the elegant Fontana Pretoria. The building on this side of the square needs restoration.

URBAN DECAY

Missing structural elements grant an unimpeded view of the sky.

I have already shared some images of our visit to La Vucciria, the famous outdoor market in Palermo in my post on zucchina lunga and pesce spada.

AT THE MARKET

Here is another image that includes ingredients for the dish I am describing today: caponata di melanzane. I am reposting the recipe from my archive: in the original post, the context was an edition of Novel Food and the dish was introduced by Inspector Salvo Montalbano.

As the photo shows, there are various kinds of melanzane. For caponata, I use the most common variety, the long, dark purple kind (which in the photo is in the background, on the right).

According to the glossary of La Cucina Italiana, caponata "features cubed eggplants, celery, and onions - each one fried separately in a generous amount of olive oil - flavored with tomatoes, raisins, pine nuts, olives, a sprinkling of vinegar, and a touch of sugar for a characteristically sweet-and-sour flavor... Caponata is usually enjoyed as an antipasto in its native Sicily, but it also makes a lovely side dish and is quite delicious spooned onto crisp bread for crostini."

Caponata marries many flavors in an agrodolce (literally, sour-sweet) medley. Being a traditional and popular dish means that there are countless recipes for caponata, with ingredients (like bittersweet chocolate) added and subtracted depending on location. Since I don't have a family recipe to rely on, I felt free to experiment using an appealing recipe on Saveur as blueprint. I made several changes to both its list of ingredients and its procedure, based on my taste. The result is really good, though not quite authentic. I think Sicilians would not agree with my preference for oven-roasting rather than frying the eggplant: you are welcome to side with them and follow the instructions on the recipe that inspired me.

Here is the list of the ingredients I used:

• 2 eggplants (the long, dark purple kind), cut into 1/2"-thick slices
• sea salt
• 1 large yellow onion, chopped
• 2 anchovies preserved in salt, halved, cleaned and chopped
  
• 3 ripe medium tomatoes, briefly immersed in boiling water, peeled, cored and coarsely chopped
• 2 ribs celery, thinly sliced crosswise
• 2 tablespoons blackberry and raspberry vinegar or red wine vinegar
• 2 tablespoons tomato paste
• 2 tablespoons golden raisins
• 2 tablespoons pine nuts, lightly toasted in a dry skillet
• 2 tablespoons capers, rinsed
• 12 pitted Kalamata olives, quartered (I like them better than green olives)
• 1 red bell pepper, roasted, peeled, cored, seeded, and chopped
• freshly-ground black pepper
• 2 tablespoons slivered fresh basil (from my pot)
• 2 tablespoons chopped fresh flat-leaf parsley (from my herb garden)

Note that, with respect to the Saveur recipe, I halved the quantity of vinegar and omitted the sugar. This is because I wanted to keep the sour and sweet flavors a bit toned down. I have a memory of a caponata eaten eons ago that was a bit too vinegary even for the vinegar lover that I am. I also used a berry vinegar instead of a red wine one, for no reason other than because I like it. I love anchovies and make generous use of them. You may decide to be more guarded.

Sprinkle the eggplant slices with salt and let them stand for an hour, then remove the excess salt and pat them dry. Distribute on a baking sheet and bake at 425 F for 15 minutes, then flip and bake for the same amount of time. When cool, cube (1/2") the eggplant.

Generously spray with olive oil a pan and add the onion and anchovies. Cook for 5 minutes, then add the celery and cook on low heat for 10 minutes. If the pan becomes dry, add a bit of the juice from the chopped tomatoes. Add tomatoes and turn up the heat to medium-low. Cook 5 minutes, then add the vinegar and tomato paste. Mix to dissolve the paste. Cook 3-4 minutes. Add cooked eggplant, raisins, pine nuts, capers, olives, roasted pepper. Cook until everything is hot. Add salt and pepper to taste. Transfer to a plate and let cool slightly. Sprinkle basil and parsley on the top. Let the caponata cool before serving it. Better yet, store the caponata for a day in the fridge, take it out in advance and serve at room temperature.

 

Caponata is better eaten the day after it is made. The flavors of the different ingredients come together in a sumptuous chorus, where each voice is distinguishable, but also works in harmony with the others. Caponata has a rich flavor. It reminds me of Sicily: its colors, its many architectural styles, its composite historical heritage.

L'Abbecedario culinario d'Italia ci invita a visitare la Sicilia e stavolta ho delle foto da condividere, scattate durante una visita a Palermo, cinque anni fa.

CATTEDRALE DI PALERMO

La Cattedrale affascina con le sue ricche decorazioni architettoniche.

La foto mostra un paio di tipi di melanzane. Per la caponata, uso il tipo più comune, la melanzana di forma allungata e di colore viola scuro (che nella foto si vede dietro, a destra).

Secondo il dizionario della Cucina Italiana, la caponata si prepara con "melanzana tagliata a dadi, sedano e cipolle - ciascuna verdura fritta separatamente in una quantità generosa di olio d'oliva - insaporita con pomodori, uvetta, pinoli, olive, una spruzzata d'aceto e un tocco di zucchero per dargli un caratteristico sapore agrodolce… In Sicilia, la caponata di solito viene mangiata come antipasto, ma è un gustoso contorno ed è ottima sopra un crostino."

Essendo la caponata un piatto tradizionale e popolare, ci sono molte ricette, con ingredienti in più (come il cioccolato amaro) o in meno a seconda della località geografica. Dal momento che non ho una ricetta di famiglia da condividere, mi sento abbastanza libera di scegliere la ricetta base che preferisco. Qualche anno fa, lessi una ricetta interessante sulla rivista Saveur. Ho apportato diverse cambiamenti sia alla lista degli ingredienti che alla procedura di preparazione, dettati dai miei gusti. Il risultato è ottimo ma non proprio autentico. Credo che i siciliani non siano d'accordo con la mia scelta di cuocere al forno piuttosto che friggere le melanzane e voi siete liberi di prendere la loro parte e seguire più da vicino la ricetta che mi ha ispirato.

Questa è la lista degli ingredienti che ho usato:

• 2 melanzane (quelle lunghe, viola scuro) tagliate a fette spesse 1,25 cm
• sale fino
• una grossa cipolla tritata
• 2 acciughe sotto sale, tagliate a metà per lungo, pulite e tritate
• 3 pomodori medi maturi, immersi per poco tempo in acqua bollente, pelati e tagliati a pezzetti
• 2 coste di sedano tagliate a fettine fine
• 2 cucchiai di aceto di more e lamponi o aceto di vino rosso
• 2 cucchiai di concentrato di pomodoro
• 2 cucchiai di uvetta bianca (zibibbo)
• 2 cucchiai di pinoli leggermente tostati in una padella a secco
• 2 cucchiai di capperi sciacquati
• 12 olive nere tipo Kalamata, nocciolo rimosso e tagliate in quattro (le preferisco alle olive verdi)
• un peperone dolce arrostito, pelle e semi rimossi, e tagliato a pezzetti
• pepe nero macinato fresco
• 2 cucchiai di basilico fresco tagliato a chiffonade
• 2 cucchiai di prezzemolo fresco tritato

Rispetto alla ricetta di Saveur, ho ridotto a metà la quantità di aceto e omesso lo zucchero, perché tanti anni fa mangiai la mia prima caponata e mi ricordo che il sapore di aceto era troppo pronunciato anche per un'amante dell'aceto come me. Il mio uso di un aceto fruttato è semplicemente dovuto a preferenza personale. Adoro le acciughe e ne faccio uso liberale: voi potete decidere di essere più cauti.

Salare le fette di melanzana e farle spurgare per un'ora, poi rimuovere l'eccesso di sale e asciugare. Distribuire le fette di melanzana su una lastra da forno facendo uno strato unico. Cuocerle a 218 C per 15 minuti, girarle e cuocerle per altri 15 minuti. Lasciare intiepidire e poi tagliare a dadi di circa 1,25 cm di lato.
 

Oliare in modo generoso una padella e aggiungere cipolla e acciughe. Cuocere per 5 minuti, poi aggiungere il sedano e cuocere a fuoco dolce per 10 minuti. Se il fondo si asciuga, aggiungere un po' del sugo dei pomodori a pezzi. Aggiungere i pomodori e alzare il calore a medio-basso. Cuocere per 5 minuti, poi aggiungere aceto e concentrato di pomodoro. Mescolare bene per sciogliere il concentrato. Cuocere 3-4 minuti, poi aggiungere le melanzane, l'uvetta, i pinoli, i capperi, le olive e il peperone arrosto. Cuocere fino a quando tutti gli ingredienti sono ben caldi. Aggiustare sale e pepe a seconda del gusto personale. Trasferire la caponata su un piatto e farla intiepidire leggermente. Distribuire il basilico e il prezzemolo sulla superficie. Far freddare la caponata prima di servirla, o, meglio ancora, farla riposare un giorno in frigorifero, tirarla fuori in anticipo e servirla a temperatura ambiente.

La caponata è decisamente più gustosa il giorno dopo, quango gli ingredienti hanno avuto il tempo di accordarsi in un coro armonioso dove ogni voce è chiaramente riconoscibile ma anche in armonia con le altre. La caponata ha un sapore ricco. Mi ricorda la Sicilia: i suoi colori, i vari still architettonici che vi si incontrano e il suo composito retaggio storico.

Last year, I made two variations of this colorful, deeply flavored, and light corn salad. This year, after preparing it the same way a couple of times, I decided to make a small change substituting the hearts of palm (cuori di palma) with a ripe avocado. The tendency avocado has of turning into a cream makes olive oil not necessary, so the absence of olive oil from the list of ingredients is not an oversight.

The other difference is the use of chive blossom vinegar (aceto aromatizzato ai fiori di erba cipollina). As soon as this recipe from Leite's Culinaria arrived in my mail box, I knew I would try it. The chive seedling I planted a couple of years ago has grown strong and last year was divided so now I have a few chive plants spread around my little garden. I set aside enough blossoms and followed the easy instructions to make a jar of the vinegar using white wine vinegar (aceto di vino bianco). I love the rosy color and the smell clearly includes a chive component. If you have access to chive blossoms, I recommend you try. Pay attention to what David says about putting a barrier between the vinegar and the metal lid of the jar.

Ingredients:

Serves 4 as a side dish

• 2 nice, fresh ears of corn (pannocchie di granturco¹), still wrapped in their husks (if they aren't, wrap them in foil before roasting them) and with their silks attached
• 2 dozens cherry tomatoes² (when I use bigger tomatoes, like Blush, I adjust this quantity)
• 1 ripe avocado
• 1 lemon cucumber
• Sea salt and freshly milled black pepper, to taste
• chive blossom vinegar
• A few fresh basil leaves, chiffonade

Roast corn in the oven at 450 F for 20 minutes (on a baking sheet). Let cool briefly, then remove the husks. Working on a shallow bowl or pyrex dish, use a knife to separate kernels and scrapings from the cob. This page from bon appetít describes precisely the way I do this with the knife. (Save the empty cobs to make stock or broth.)

Cut cherry tomatoes in half lengthwise. If they are long, like the Blush, cut them crosswise into two or three pieces, depending on their size. Peel and dice lemon cucumber. Cut avocado into half, remove pit and dice pulp. Put all the ingredients in a bowl, add some vinegar, salt and pepper to taste and toss gently. Sprinkle basil on the salad and toss again. Serve and enjoy.

You may want to use more or less of this or that ingredient. But make this salad: it is really nice, refreshing, filling and cheerful (yes, there is such a thing as a sad salad: this one is the polar opposite). It's like edible summer.

L'anno scorso ho preparato due variazioni di questa gustosa e leggera insalata di mais. Quest'anno, dopo un paio di ripetizioni, ho deciso di usare un avocado maturo al posto dei cuori di palma. L'avocado ha la tendenza a formare una crema e quindi non uso olio d'oliva per condirla.

L'altra differenza è l'utilizzo di aceto ai fiori di erba cipollina che ho preparato seguendo questa ricetta da Leite's Culinaria con aceto di vino bianco e fiori dal mio orticello, dove ho alcune piantine di erba cipollina. L'aceto e di un bel colore rosato e il suo profumo ha una chiara componente di erba cipollina. Vi consiglio di provare a farlo, se avete i fiori.

Ingredienti:

• 2 belle pannochie di granturco ancora con le foglie (se non ci sono, prima di infornarle avvolgere le pannocchie nella pellicola di alluminio)
  
• 2 dozzine di pomodori ciliegia (quando uso pomodorini piu grossi, come i Blush, aggiusto le quantità)
• 1 cetriolo limone
• 1 avocado maturo
• sale e pepe macinato fresco, a seconda del gusto
• aceto aromatizzato ai fiori di erba cipollina
• alcune foglie di basilico fresco tagliate a chiffonade

Cuocere le pannocchie in forno a 230 C per 20 minuti (su una lastra da forno). Farle intiepidire un po' poi rimuovere le foglie. Appoggiandosi all'interno di una ciotola bassa o di una teglie di pyrex, usate un coltello per separare i chicchi dal tutolo. Questa pagina dalla rivista bon appetít (in inglese) descrive il procedimento che uso anche io per sgranare il mais col coltello. (Mettere da parte i tutoli e utilizzarli come ingrediente per fare il brodo vegetale o di carne.)

Tagliare i pomodorini a metà per lungo. Se sono lunghi, come i Blush, tagliarli per largo in due o tre pezzi. Sbucciare il cetriolo limone e tagliarlo a dadi. Tagliare a metà l'avocado, togliere il nocciolo e tagliare la polpa a dadini. Mettere tutti gli ingredienti preparati in un'insalatiera, condire con un po' d'aceto, salare e pepare a piacere e mescolare delicatamente. Spargere il basilico sulla superficie e mescolare ancora, poi servire.

Potete usare più o meno di ognuno degli ingredienti, a seconda dei vostri gusti. Ma vi consiglio di preparare questa insalata: è davvero buona, rinfrescante, saziante e allegra (esistono insalate tristi e questa è l'opposto). E l'estate sul piatto.

The aroma of fresh mint, a bit of vinegar kick, and a touch of garlic make this light dish of roasted zucchini just about perfect. The palate finds refreshing flavors and a lightly crisp texture, which can be paired with either a meat or a vegetarian main dish.  

Two large zucchini in my CSA box last week seemed to call for a nice stuffing, but then this recipe (in Italian) made me reconsider. However, frying the zucchini as the recipe directs was not an option for me, so I looked for suggestions on how to roast them and found this recipe. Then, I was good to go. I particularly liked the instruction in the original recipe to let the zucchini slices dry in the sun. Magically the sun burned off the fog in our corner of the world and I was able to follow this part of the recipe.

I stumbled upon zucchine alla scapece while I was looking for a recipe from the Italian region of Campania, whose capital city is Napoli. As you may guess, this is where we are now in our region-by-region tour of Italy. I have been to Napoli only once, many years ago, with my family, and I don't have pleasant memories from the trip, so I won't say anything, because I don't know how the city has changed in the intervening years. Whatever the urban situation, the contributions of Napoli and Campania to the Italian food culture is incredibly rich.

In the headnote to this recipe for eggplant prepared in a similar way to zucchini, Kyle Phillips says that "the word scapece derives from the Spanish (who ruled in Naples) and can be applied to any dish (usually fish or vegetable) marinated in a sweet-and-sour sauce."

Update (July 16, 2012). A comment received after I published the post under the title zucchine alla scapece leggere prompts me to add a clarification and also to amend the title. I have stated clearly that the recipe I reference calls for frying the zucchini. An Italian blogger I consulted told me that in a Neapolitan cookbook she has, the recipe for zucchine alla scapece calls for grilling the zucchini and that a friend of hers, who is from Napoli and used to own a resturant there, confirmed that zucchini for this dish can also be grilled. I don't BBQ, so the oven is really my way to go. The title of the post now has the words condite (dressed) alla scapece to indicate that I did not cook the zucchini in either of the traditional ways.

Ingredients:

• 2 large zucchini (approx. 2 lbs. / 900 g)
• 1 teaspoon of freshly squeezed lemon juice
• 1/2 - 1 tablespoon olive oil, to taste
• Sea salt, to taste
• Freshly milled black pepper, to taste
• 1 garlic clove, thinly sliced
• Leaves of several sprigs of fresh mint (menta); I used orange mint from my garden
• Wine vinegar (aceto di vino) of good quality, to taste; I used sherry vinegar

Cut the zucchini into 1/4-inch (6 mm) thick slices and distribute them on a large plate in one or two layers. Let them dry in the sun for a couple of hours.

Put two baking sheets in upper and lower third of oven and preheat oven to 500°F.

Put zucchini slices in a bowl and drizzle on them lemon juice and a bit of olive oil. Sprinkle a pinch of salt and of pepper and toss well. I find that the best way to do this is with my hands.

Line the preheated baking sheets with silicone baking mats or parchment paper and divide the zucchini slices between them, spreading them in one layer. Roast in upper and lower thirds of oven for 10 minutes.

Gently turn zucchini slices over using a fork, switch position of pans and roast until zucchini are tender, 7-8 minutes. On a serving plate, arrange about half the zucchini into one layer, overlapping some slices to make a closed surface. Distribute all the garlic slices and some of the mint leaves, sprinkle a bit of salt, if needed, then make another layer of zucchini and repeat with salt and mint leaves. Sprinkle vinegar over the surface. Let your taste guide your hand, vinegar appreciation being a very personal matter. I used two tablespoons.

Let the zucchini rest for a couple of hours. Toss right before serving. The original recipe says that the dish is better served the day after it is prepared. If you want to try, cover the plate and refrigerate overnight. I will weigh in on the statement after I try.

I contributed the first batch to a 4th of July party (thanks, Christine!) and I am looking forward to making another batch soon, because the combination of flavors is a winner for my taste.

zucchini, mint, Italian recipe

Menta fresca, aceto e un tocco d'aglio rendono praticamente perfetto questo piatto estivo di zucchine arrosto che si abbina bene sia con carne che con un secondo vegetariano.

Alla ricerca di un piatto che rappresentasse la Campania, ho trovato questa ricetta per la quale due zucchine giganti trovate nella mia cassettina erano ideali. Ma friggere le zucchine non era un'opzione valida per me e quindi sono andata alla ricerca di istruzioni per una preparazione al forno e le ho trovate su questa pagina (in inglese). A questo punto, avevo tutto il necessario per partire. Mi ha particolarmente colpito l'indicazione della ricetta originale di far asciugare al sole le zucchine affettate. Come per magia, il sole ha bruciato la nebbia (leggi: il nostro condizionatore naturale) e ho potuto seguire questa parte della ricetta.

Sono stata a Napoli con la mia famiglia molti anni fa e purtroppo non ho ricordi piacevoli del viaggio, quindi preferisco non dire nulla, dal momento che non so come la città sia cambiata negli anni che sono trascorsi. Qualunque sia la situazione urbana, il contributo di Napoli e della Campania alla cultura gastronomica italiana è incredibilmente ricco.

Aggiornamento (16 Luglio, 2012). A seguito di un commento ricevuto dopo la pubblicazione del post col titolo "zucchine alla scapece leggere" ho deciso di emendare il titolo per sottolineare la parte della ricetta originale che ho conservato, cioè il condimento. Aggiungo però anche che una blogger italiana che ho consultato sull'argomento mi ha fatto sapere che in un libro napoletano che lei ha, nella ricetta delle zucchine alla scapece le zucchine sono grigliate. Inoltre, una persona di sua conoscenza, napoletana ed ex-ristoratrice, le ha confermato che le zucchine alla scapece possono anche essere grigliate. Io non uso il BBQ (lo so, sembra strano, dal momento che vivo negli USA, dove il BBQ è diffusissimo) per cui il forno e la mia opzione.

Ingredienti:

• 2 grosse zucchine (circa 900 g)
• 1 cucchiaino (5 ml) di succo di limone fresco
• olio d'oliva, a piacere
• sale fino, q.b.
• pepe nero macinato fresco, a piacere
• uno spicchio d'aglio affettato molto fine
• foglie di diversi rametti di menta fresca (io ho usato la menta arancio del mio orticello)
• aceto di vino di buona qualità, a piacere (io ho usato aceto di sherry)

Tagliare le zucchine a fettine spesse circa 6 mm e distribuirle su un piatto largo facendo uno o due strati. Farle asciugare al sole per un paio d'ore.

Con due griglie, dividere il forno in terzi e mettere una placca da forno sul terzo in alto e una su quello in basso. Riscaldare il forno a 260°C.

Mettere le fette di zucchina in un'insalatiera e spruzzarle con succo di limone e un po' d'olio d'oliva. Aggiungere un pizzico abbondante di sale e un po' di pepe nero e mescolare bene. (Io lo faccio con le mani.)

Foderare le placche preriscaldate con tappetini di silicone per forno o carta da forno e distribuire le zucchine tra i due in un solo strato. Far arrostire per 10 minuti.

Con una forchetta, girare le zucchine e rimetterle in forno, scambiando la posizione delle placche. Far arrostire fino a quando le zucchine non siano tenere, 7-8 minuti. Con metà circa delle zucchine, fare uno strato compatto su un piatto da portata. distribuite le fettine d'aglio, delle foglie di menta, e un pochino di sale (se necessario). Fare un altro strato col resto delle zucchine e ripetere con la menta e il sale. Spruzzare l'aceto sulla superficie, a piacere. L'aceto è una cosa personale e quindi preferisco non dettare quantità. Io ne ho usati due cucchiai (30 ml).

Far riposare le zucchine per un paio d'ore. Mescolare solo poco prima di servire. La ricetta originale dice che la "scapece" migliora se servita il giorno seguente. Mi riservo il diritto di confermare (o contraddire) tale affermazione quando avrò avuto modo di metterla alla prova.

Ho portato questo piatto ad una cena per il 4 di Luglio dalla mia amica Christine e non vedo l'ora di rifarle ancora, perché la combinazione di sapori è perfetta per i miei gusti.

I am officially in love with kale blossoms. They are pretty, fun to pick and a pleasure to have in the kitchen.

You have already seen this photo of a Red Russian kale blossom in my recent post on barley and borlotti soup.

Here's an image of a younger blossom early in the morning. Kale is good, healthy and photogenic.

Here are a some herbs and edible flowers from my little garden (from top left, going counterclockwise): mint (menta), marjoram (maggiorana), thyme flowers (fiori di timo), winter savory (santoreggia montana), chives (erba cipollina) and borage flowers (fiori di borragine). The garlic head was there for a different reason, that is, dish.

With the ingredients above and pastured eggs (uova) from friends (including some duck eggs), it was easy to decide to prepare a frittata. When you have fresh ingredients from your garden, but maybe not enough to make a side dish; when you need to make something quick that is also nourishing and cheerful; when you feel like mixing and matching a bit of this and a bit of that, frittata is your friend.

Today's frittata is a little symphony of flavors. The palate follows hints that point to one herb or another. And the purple borage flowers are little contrasting dots on the surface.

Ingredients:

• 2 oz. (56 g) kale blossoms
• Olive oil
• 6 pastured eggs 
• 3 tablespoons (45 ml) water
• Fine sea salt and freshly milled black pepper
• 2 tablespoons of finely chopped, mixed fresh herbs (dill, marjoram, mint, parsley, thyme, winter savory, etc.)
• 1 tablespoon finely snipped chives
• A handful of small edible flowers, like borage and thyme flowers
• 2 tablespoons freshly grated Parmigiano-Reggiano

Oil a 10-inch skillet and warm up. Add blossoms and lightly sauté for a few minutes, stirring every now and then.

Break the eggs in a bowl and whisk them lightly until just blended. Add the water, then a couple of pinches of salt a bit of pepper and whisk briefly. Add the herbs and flowers and stir briefly.

Turn on the broiler. (If your oven allows it, choose the "low" setting.)

Pour the eggs slowly into the skillet. With the help of a fork, gently arrange herbs and flowers to ensure an even distribution. Sprinkle cheese on the surface. Cook over low heat until the eggs are set. After the edge is set, run a spatula under it and shake the frittata gently to ensure the bottom does not stick to the pan.

Place the skillet in the oven, leaving the door ajar, for a couple of minutes. The frittata will puff up a bit. Take the skillet out of the oven (don't forget that the handle is hot) and let rest of a couple of minutes, then slide the frittata onto a serving plate. Cut into wedges and serve.

E queste sono delle erbe e dei fiori commestibilidal mio orticello: menta, maggiorana, fiori di timo, santoreggia montana, erba cipollina e fiori di borragine. (L'aglio in secondo piano è per un altro piatto.)

Con questi ingredienti e uova dalle mie amiche che hanno le galline non è stato difficile decidere di fare una bella frittata. 

La frittata di oggi è una piccola sinfonia di sapori. Il palato segue tracce che portano ad una certa erba aromatica o ad un'altra. E i fiori viola della borragine sono puntini di contrasto sulla superficie.

Ingredienti:

• 56 g germogli di cavolo riccio
• olio d'oliva
• 6 uova codice 0
• 3 cucchiai (45 ml) acqua
• sale fino e pepe nero macinato fresco
• 2 cucchiai di erbe aromatiche tritate (come aneto, maggiorana, menta, prezzemolo, santoreggia, montane, timo)
• 1 cucchiaio erba cipollina sminuzzata (con le forbici)
• una piccola manciata di fiori commestibili, come fiori di borragine e di timo
• 2 cucchiai di Parmigiano-Reggiano grattugiato fresco
  

Oliare bene una padella (25 cm) e scaldarla. Aggiungere i germogli ecuocerli per qualche minuto girandoli di tanto in tanto.

Rompere le uova in una ciotola e sbatterle leggermente. Aggiungere l'acqua e mescolare per incorporare il liquido nelle uova. Aggiungere un paio di pizzichi di sale e un po' di pepe, erbe e fiori e mescolare.

Versare lentamente le uova nella padella e con una forchetta distribuire erbe e fiori in modo uniforme. Spargere il formaggio sulla superficio. Cuocere a fuoco dolce fino a quando le uova sono rapprese. Nel frattempo, accendere la parte alta del forno. (Se il vostro forno lo permette, scegliere l'opzione a calore basso.)

Una volta che il bordo delle frittata si è rappreso, passare una spatolina sotto il bordo e scuotere la padella (delicatamente) per evitare che la frittata si attacchi.

Quando le uova si sono rapprese, mettere la padella nel forno, lasciando lo sportello socchiuso, per un paio di  minuti. (Se avete scelto l'opzione a calore basso, probabilmente ci vorranno 3 minuti.) Tirare fuori la padella (fare attenzione: il manico scotta) e far riposare un paio di minuti, poi mettere la frittata su un piatto, tagliare e servire. Come al solito con la frittata, potete conservare gli avanzi in frigo e mangiarli il giorno dopo a temperatura ambiente.

With my pail and my ball, I had all I needed for my adventure.

Then I got a bit tired of walking and sat down to look at an airplane tearing up the silence around me.

I have no memory of the episode in the photos. My memory is the story I was told by my father: during a family vacation in Roseto degli Abruzzi, at some point I took off and my father followed me with his camera.

We spent more than one family vacation in Roseto degli Abruzzi. I have a few more photos, but no real memory. Those vacations and a couple of short trips for swim meets in my early teens were my only visits to Abruzzo, where we have now stopped in our tour of the 20 Italian regions.

The reason for choosing cioffa 'mbriica (cavolfiore ubriaco in dialect) to represent the region is because it is the closest recipe I have found to a dish my mother used to make, which I am planning to feature soon. Once again, the original recipe comes from the Accademia Italiana della Cucina site and I have adjusted it slightly.

Ingredients:

• 1 1/4 lb. (570 g) cauliflower (clean weight, i.e., without the larger leaves)
• 1-2 tablespoons (15-30 ml) olive oil
• 1/4 cup (60 ml) white wine (vino bianco)
  
• a bay leaf (foglia di alloro)
  
• a garlic clove, peeled
• red pepper flakes, to taste
• sea salt, to taste

Serves 2-3 (double the quantities for a larger party)

Cut cauliflower into bite-sized florets. Peel stalk(s) and cut it into 1/4-inch thick rounds. Put all the ingredients, except the salt, in a deep sauté pan or terra-cotta casserole where the cauliflower fits in a single layer. The recipe calls for enough water to cover, but I added only enough to ensure that the cauliflower sat in 1/4 inch of liquid. Cover the pan and cook over low heat until the cauliflower is tender to your liking. Stir the cauliflower every now and then. If the pan gets dry, add some hot water.

When ready, sprinkle salt to taste, and give a good stir. Remove the garlic clove and the bay leaf, then serve.

Con secchiello e palla, ero pronta per la mia avventura.

Poi mi sono fermata a riposare e a guardare un aereo che lacerava il silenzio.

Non ho un ricordo di questo episodio, ma mi ricordo la storia che mi ha raccontato mio padre: durante una vacanza con la mia famiaglia a Roseto degli Abruzzi, ad un certo punto ho preso secchiello e palla e ho cominciato a camminare. Mio padre mi ha seguito con la macchina fotografica e ha scattato scene della mia avventura.

Abbiamo trascorso un paio di vacanze a Roseto degli Abruzzi. Ho alcune altre foto, ma nessuna memoria concreta. Quelle vacanze e un paio di soggiorni per gare di nuoto quando ero teenager sono state le mie uniche visite in Abruzzo, la tappa attuale del nostro tour delle regioni italiane.

Ho scelto cioffa 'mbriica (cavolfiore ubriaco) per rappresentare l'Abruzzo perché è la ricetta più simile che abbia mai visto ad un piatto che mia madre faceva e del quale parlerò presto. Anche stavolta, la ricetta originale proviene dal sito dell'Accademia Italiana della Cucina e io l'ho adattata.

Ingredienti:

• 570 g cavolfiore (peso pulito, cioè senza le foglie larghe che vengono scartate)
• 15-30 ml olio d'oliva
• 60 ml vino bianco
• una foglia d'alloro
• uno spicchio d'aglio pelato
• fiocchi di peperoncino (o del peperoncino intero), a seconda del gusto
• sale fino, q.b.

Serve 2-3 (raddoppiare le quantita per un numero superiore di convitati)

Tagliare il cavolfiore a cimette e il gambo a rondelle spesse mezzo cm. Mettere tutti gli ingredienti, tranne il sale, in un tegame dove il cavolfiore forma un solo strato. La ricetta dice di aggiungere abbastanza acqua da coprire, ma io ne ho messa solo in modo che il cavolfiore resti in mezzo cm di liquido.

Coprire il tegame e cuocere a fuoco basso fino a quando il cavolfiore sia tenero a seconda del vostro gusto. Ogni tanto, mescolare il cavolfiore e se necessario, aggiungere dell'acqua. Quando il cavolfiore è cotto, salare a seconda del gusto e mescolare bene. Togliere l'aglio e l'alloro e servire.

For the current edition of Cook the Books, we are reading The United States of Arugula by David Kamp (2006). I don't think I can add much to the many reviews the book has received since its publication. It is undoubtedly an important book, very interesting and pleasant to read. Kamp's book paints a complete and complex picture that helps the reader understand how certain aspects of the food world in the US evolved to be the way they are now.

My perspective in reading the book is that of an outsider-insider: I am an Italian who moved to the San Francisco Bay Area (theater of a number of the developments narrated in the book) as an adult (18 years ago), with well-established food roots. I learned not only to cook but to enjoy doing so, and, as a result, I eat out only very rarely. Finally, I don't watch television. From this special perspective, the story told in the book is fascinating, and also puzzling. I am very much Italian in my approach to food and totally immune from the obsession with French cuisine depicted in the book. Such obsession puzzles me.

Kamp dedicates some thoughtful paragraphs to Italian cuisine. You can read an example here. This excerpt brought to my mind two things. First, the 1996 movie Big Night, which shows very nicely the tension between Italian regional cuisine and Americans' perception of it influenced by the Italian-American community. Then, an episode from my previous life. Before moving to the US, one summer, I worked at a Club Med resort in Morocco. The guests came from France, Italy, Belgium, Germany, the UK. One evening, the dining room was divided into two sections: in one, guests would be served a French menu, in the other, an Italian menu. At dinner time, things did not quite go as expected: almost everybody wanted to go into one section — and it was not the one where French food would be served. As Marcella Hazan says in the passage referenced above with regards to Italian food, "it's food that you eat with pleasure... You don't have to analyze it, you just enjoy that it's so."

The recipe that follows is connected to another page of the book, where Ms. Betty Fussell's comment on food hype is reported, within the context of an assessment of Alice Waters' contribution to the discussion on food ways. (You can read the page here.) These Fussell's words made me smile: "little tiny Italian fava-bean grower down the road." I am actually happy that nowadays I can find fresh fava beans at the farmers' market (and fava greens too), a food that is quite common in Italy and that I ate often as a kid.

The other element of the recipe is garlic scapes. The scape is the elegant leafless "stem from which the seed head of the garlic bulb is formed" (source). Garlic scapes are a relatively recent entry in my kitchen: they have gained in popularity in recent years and are now easily found at farmers' market, appearing at the same time as fava beans, a coincidence that I interpreted as a suggestion.

Most recipes I have seen use scapes to make a variation of pesto, or as a side dish, roasted. My spread tastes of fresh fava beans, of aromatic garlic scapes and of pungent fiore sardo cheese. In this small dish, I bring together my Italian heritage and my experience with interesting ingredients I find in Californian farmers' markets. More than an exact recipe, this is an invitation to play with the main ingredients. It is also a variation on the classic Italian combination of fava beans and pecorino cheese.

Note: Savory has a flavor reminiscent of thyme, with mint and pepper tones. I have a bush of winter savory (santoreggia montana) in my herb garden, and I like to experiment with it. If you don't have it, try using one or two leaves of fresh mint (menta).

Print-friendly version of briciole's recipe for crema di fave e scapi florali d'aglio

Ingredients:

• 1 1/4 lb. fresh fava beans in their pod (about 1 1/4 cup shelled)
• 2 1/2-3 oz. [70-85 g] garlic scapes
• 1 teaspoon fresh winter savory, optional (see note above)
• 1/4 cup fresh flat-leaf parsley leaves
• 3 tablespoons freshly grated fiore sardo
• 2 tablespoons olive oil
• 1 teaspoon freshly squeezed lemon juice
• Fine sea salt, to taste

Shell fava beans and blanch them for one minute, drain them and plunge them into a bowl of cold water. Drain them again, then remove the skin from the beans to bring their bright green core to light. Set aside.

Preheat the oven to 425 F. Cut thinner portion of garlic scapes (above the bulge); if they've yellowed, discard. Spread all the scapes onto a baking sheet lined with a silicone baking mat and sprinkle with olive oil and a bit of sea salt. Bake for 12 minutes, then remove the thinner pieces. Bake the rest for another 3-4 minutes. Let cool slightly, then coarsely chop scapes. (This seems complicated, but the top of the scapes ends up charred and I am trying to avoid that. If it still happens, snap off the charred portion and discard it before proceeding with the recipe.)

Put fava beans and scapes in the food processor and pulse to chop. Add herbs and process some more, then add the cheese and process briefly. While pulsing, dribble the oil into the feeding tube, then the lemon juice. Finally, sprinkle a bit of salt and process to a smooth paste by pulsing for several seconds at a time.

I have found that it is better to allow the ingredients to influence each other for a bit before changing the balance, so let the spread rest for 20 minutes or so, then taste and adjust seasoning (salt, lemon juice). Refrigerate until ready to use and take out of the refrigerator in advance, so that the spread in not cold when you serve it.

Years ago, some time after I had moved to California, a colleague described to me a squash whose pulp, once cooked, looked like spaghetti. I remember that, as I was listening, I thought "Well, it's not April 1st, so this story unrelated to the time of year." I thought that it was a story like that of spaghetti growing on trees. In this case, spaghetti grew close to the ground. The background to the story was my curiosity about zucca (pumpkin, winter squash), a food that had never appeared on the table when I was growing up and that I was slowly learning to know.

When later I saw some melon-like fruit labeled "spaghetti squash" at the grocery store, I had to receonsider my position. I bought one of the squashes and verified that indeed, once cooked, the pulp of this squash separates in strands that remind one of broken spaghetti.

A short detour. Learning to wrap spaghetti around a fork takes a bit of practice, so young kids have their portion cut into short strands that can be more easily handled. However, it becomes a point of pride to be able to eat spaghetti properly, and once that happens, having an adult cut your spaghetti is an affront. While I have forgotten the details of my evolution on the spaghetti-eating path, I preserve the negative gut-feeling reaction to the sight of someone cutting spaghetti. There was one dish for which my mother broke spaghetti into short strands: cauliflower soup (minestra di cavolfiore). However, the breakage in this case occurred prior to cooking.

Back to spaghetti squash, I like that it offers a chance to prepare squash in different ways, namely to dress it as if it were pasta. Due to its thick skin, spaghetti squash stores well. The one in the photo has spent several months in my storage space without problems. I must admit that my technique for removing the pulp from the skin needs refinement: I could not get strands longer than a couple of inches, which means my plate of "spaghetti" is not likely to fool many people. (And considering my feelings about broken spaghetti, having a bowl of it did not make me particularly proud of myself.)

But whoever is fooled, once they take the first forkful to their mouth, will hear me squeal: "Pesce d'Aprile!" All right, that in theory would happen only if the date were April 1st, as explained in this post. But over at Very Good Recipes, April 1st will stretch for the whole month of April, thanks to the April Fool Challenge. I am one of the judges, so my post does not take part in the challenge, but is meant to illustrate what we are looking for in the entries submitted for it.

The "spaghetti" in the top photo were dressed with a simple tomato sauce (sugo di pomodoro). Last summer, I made several batched of strained roasted tomatoes and froze them in one- and two-cup sealable bags. When I want to make some tomato sauce, I grab one of the two-cup bags, thaw it and the sauce is ready in a short time.

Ingredients:

• a spaghetti squash
• 2 cups strained roasted tomatoes, thawed if frozen
• olive oil
• a shallot, minced
• leaves of a sprig of thyme
• a small garlic clove, minced
• sea salt, to taste
• freshly grated Parmigiano-Reggiano, to taste

Preheat the oven to 375 F. Cut squash in half lengthwise, remove seeds and threads (a grapefruit spoon is an excellent tool for this task), place on a lined baking sheet and bake for 40 minutes or until pulp is cooked. Let cool briefly, then with a fork, remove the pulp in strands and place in a large bowl. Sprinkle a bit of salt and stir. Note that spaghetti squash can also be cooked in a microwave or boiled. I favor the oven because it imparts a nice flavor to the squash and dries out some of the water it contains.

In a small saucepan, warm up a bit of olive oil, then add shallot and thyme. Cook gently for a few minutes, then add garlic. Cook for a couple of minutes, then add tomatoes. Bring to a simmer and cook for 8-10 minutes. Adjust salt, to taste.

Place some of the "spaghetti" in each bowl, distribute some tomato sauce over it, then sprinkle some cheese and serve immediately.

When you eat the first forkful, you'll notice that this spaghetti has a different texture from pasta and the taste is different as well. It's probably better to compare spaghetti squash with other types of squashes. The strands maintain a certain amount of bite, which allows the visual illusion. The flavor is quite mild, so choose some condiment or a nice sauce to go with it — as in the case of pasta, come to think about it. And as in the case of pasta, I recommend not to overdo with sauce, cheese or whatever else you are adding.

April Fool Challenge, spaghetti squash, tomato sauce
