The best part of Halloween is going to the pumpkin patch to choose pumpkins (zucche), some for carving and some for cooking. A visit to Warren Creek Farms during the month of October entails also a visit to their corn maze, which has a different design every year. The fact that I am writing this post indicates that we made it out of the maze safe and sound (thanks to my husband's orienteering skills; I am hopeless at finding my way).
No, no, we did not buy all those pumpkins.
Carving pumpkins is my husband's domain. Here's this year's creation:
If he carves out some large pieces of pumpkin, I cook them for future use. And I always toast the seeds he extracts from the pumpkin's bowels. Just in time for the annual seed toast, I read this post by Elise of Simply Recipes, in which she recommends boiling the seeds before roasting them. That was something I had not tried and after doing so, I recommend it too.
In terms of oven temperature, I have used a high temperature for a shorter period of time rather than a lower temperature for a longer time, and I found confirmation of my procedure in this post which discusses the results of a side-by-side comparison of pumpkin seeds prepared in various ways.
Ingredients:
- pumpkin seeds rinsed to remove the pumpkin pulp attached to them
- sea salt
Measure an amount of water 4 times the volume of pumpkin seeds: I had 1 1/2 cups of seeds, so I measured 6 cups of water. Add 1 tablespoon (15 g) of salt for every 2 cups of water. I actually used less than that amount, 2 teaspoons (10 g) for every 2 cups of water (so, 2 tablespoons for 6 cups), because I prefer seeds that are less salty.
Bring salted water to a boil and dump pumpkin seeds in it. Preheat the oven to 400 F.
Boil gently for 10 minutes, then drain and pat dry with a kitchen towel. (Note that in Elise's recipe, seeds are added to the cold water, while other recipes add them to the boiling water.)
Spread the seeds in a single layer on a baking sheet and roast them in the oven for 15-20 minutes (depending on their size). Stir the seeds a couple of times while in the oven and make sure they don't get over-toasted.
Let seeds cool thoroughly, crack them open and enjoy. As you know, they are addictive.
Some recipes directs you to add spices to the pumpkin seeds, but I prefer them plain, just lightly salted, because that's how I ate them growing up. In Rome they are called bruscolini. In Sicily, they are called simenza.

pumpkin seeds, Halloween recipe
La parte più divertente di Halloween, e quella che non credo sia ancora stata importata in Italia, è la visita ad un campo di zucche (pumpkin patch) per scegliere quelle da intagliare e anche qualcuna da cuocere. La nostra visita annuale a Warren Creek Farms durante il mese di Ottobre comprende anche una visita al labirinto di granturco, che ogni anno ha un disegno diverso. Il fatto che sono qui che scrivo indica che siamo riusciti ad uscire sani e salvi (grazie a mio marito che si orienta bene: io sono una frana).
No, non abbiamo comprato tutte quelle zucche.
L'intagliatore di zucche di casa è mio marito. Questa è la creazione di quest'anno:
Se rimuove dei pezzi piuttosto grossi di zucca, li cuocio e uso la polpa. In ogni caso, recupero i semi e li tosto. Il giorno prima che mio marito cominciasse la sua opera scultorea, ho letto questo post di Elise di Simply Recipes, nel quale raccomanda di bollire i semi prima di tostarli, un procedimento che non avevo mai seguito prima ma che ora, dopo averlo provato, raccomando anche io.
Per quanto riguarda la temperatura del forno, io uso una temperatura più elevata per meno tempo piuttosto che una temperatura inferiore per più tempo e ho trovato conferma della mia scelta in questo post che descrive i risultati del paragone tra semi di zucca preparati in modi diversi.
Ingredienti:
- semi di zucca sciacquati per rimuovere la polpa che rimane attaccata quando vengono tirati fuori dalla zucca
- sale
Misurare una quantità di acqua 4 volte il volume dei semi di zucca: io avevo 350 ml di semi e ho misurato 1,4 l d'acqua. Aggiungere 15 g di sale per ogni 475 ml d'acqua. Io ne ho usato di meno, perché preferisco i semi meno salati: 10 g per ogni 475 ml. A 1,4 l d'acqua ho quindi aggiunto 30 g di sale.
Portare a bollore l'acqua salata e versarci i semi di zucca. Nel frattempo, scaldate il forno a 20o C. Bollire per 10 minuti, poi scolare i semi e asciugarli con un canovaccio. (Nella ricetta di Elise i semi vengono aggiunti all'acqua fredda mentre in altre ricette vengono aggiunti quando l'acqua bolle.)
Disporre i semi su una lastra da forno in un solo strato e arrostirli per 15-20 minuti (a seconda della grandezza). Girare i semi un paio di volte durante la cottura in forno e assicuratevi che non vengano tostati in eccesso.
Far raffreddare i semi e poi sgranocchiateli con piacere. Come sapete, è difficile smettere.
Alcune ricette suggeriscono di aggiungere spezie varie ai semi, ma io li preferisco solo salati, come li mangiavo da ragazzina. A Roma li chiamano bruscolini e in Sicilia, simenza.
